The usual crowd rolled up on Thursday with brownies in hand. Some were extremely ecstatic with their effort while others were so disappointed that they didn’t want to put them on the counter.
After several chews and the onset of a sugar rush, debate began on which was the best. For a while a general consensus could not be found until some unaware caravaners stopped out the front of the Hall.
When Frank and Faye Parker drove into Yaninee to see Frank’s grandmother’s name on the Hall’s foundation stone they never thought they’d be roped into judging the Brownie Bake-off, but even they couldn’t agree on a single winner so it came down to two. For your everyday “lets eat a brownie moment” the winner was a chocolate walnut brownie, but for those ” let’s have a decadent chocolate fudgy moment” the winner was a super luscious Choc -Peppermint brownie.
Chocolate Walnut Brownie
185g dark chocolate
125g butter
3/4 cup sugar
2 eggs
1 cup Plain flour
1 cup chopped walnuts
Melt chocolate and butter together over a low heat, stir in the sugar and eggs one at a time.
Beat well with a wooden spoon and then stir in sifted flour and walnuts.
Pour into greased 20cm square cake tine and bake in moderate oven for about 25 mins. Cool in the pan.
Sprinkle with icing sugar and cut into squares when cool.
**Note** Nuts can be omitted
Choc -Peppermint Brownie
250g block peppermint choc broken into squares
Filling
150g butter chopped
250g dark chocolate
1 1/2 cups brown sugar
3 eggs lightly beaten
1 cup plain flour
Icing
1/4 cup icing sugar
2 tsp hot water
peppermint essence and colouring
Grease a small slice tray and preheat oven to 190C
Melt butter and chocolate, mix till smooth. Using a wooden spoon stir in sugar and eggs, add flour, mix well
Pour into a pan, scatter choc peppermint squares over top and push into mix.
Cook for 35 mins or until a skewer comes out moist but not wet. Cool in pan.
Make icing and drizzle over top. Allow to set, remove from pan.
